Super Dip

All that is required here is imagination and a chopper. You can use as many kinds of vegetables as you want. This is one example.

Ingredients:

1 cup of the summer salsa (finely blended)

½ cup diced bell pepper

1 cup hominy

½ cup wild onions (or the small white onions from the store)

1 chopped jalapeno (or if you prefer mild, use ¼ cup of pickled jalapenos)

1 cup chopped tomatoes

*1 cup black-eyed peas

salt to taste

pepper to taste


Mix in bowl, cover and let sit for at least 12 hours so it will marinate.

Serve with homemade tortillas.
